Cafe Milagro Coconut Cream Pie Recipe

A favorite dessert for many at Cafe Milagro is our Coconut Cream Pie! So much so that two of our recent patrons asked us for the recipe and then sent us their photos of the pie! Thanks to Heather and Ann for sharing with us…they look delicious!

Makes 2

CRUST

  • 1 Stick Butter
  • 2 Cups Flour
  • ¾ Cups Sugar
  • A bit of cold water
  • 1 Tbsp Vanilla
  • 1 Tbsp Cinnamon

Cook in oven prior to filling

FILLING

  • 1 Cup Sugar
  • ½ Cup Corn Starch
  • ¼ tsp Salt
  • 5 Egg Yolks
  • 10 ½ Cups Milk
  • 1 Tbsp Vanilla
  • 1 Cup Shaved Coconut
  • 2 Tbsp Butter

Cook filling ingredients on stovetop until thick and then fill crust. Let cool and then chill. Serve with whipped cream.
